Since it's the skin you want to measure in terms of getting the right exposure, you need to make the camera's metre read the light that is falling on the faces of all the people you are photographing. Look at someones face that is half in sunlight, half in shadow, and allow the camera to measure the midpoint between the highlight and the shadow, adjusting until the little red dot is perfect.
